FAQs

Why is my microwave peanut brittle chewy? ›

Adding baking soda when making peanut brittle makes the hot sugar syrup foam, creating lots of tiny air bubbles that give the candy the porous, crispy honeycomb texture it's known for. Why didn't my peanut brittle turn out? If your peanut brittle is light in color and chewy, it was not cooked long enough.

Why didn't my homemade peanut brittle get hard? ›

The main reason why peanut brittle doesn't get hard and have the crunch we expect is because the sugar was not cooked long enough. The sugar needs to be cooked to what is called the hard crack stage, 300ºF.

Why add baking soda to peanut brittle? ›

Baking soda is also very important at this stage since it reacts to the heat, creating carbon dioxide that aerates the caramel, enabling it to snap when someone bites into it rather than requiring them to gnaw at it until it breaks or pulls apart.

What makes homemade peanut brittle sticky? ›

Whether it's during the cooking, cooling, or storage process, moisture and humidity can ruin the best batch of brittle in minutes, leaving you with a soggy, sticky mess. This is why eliminating moisture anywhere you can is our top tip on how to store peanut brittle.

What makes peanut brittle too hard? ›

Why is it too hard? Using baking soda usually prevents peanut brittle from being too, well, brittle. However, if you cook the candy past the set temperature or overwork the candy once you spread it out onto the cookie sheet, that can cause it to become very hard and difficult to bite through.

How to keep peanut brittle crunchy? ›

The candy will attract moisture from the air, making it unpleasantly sticky instead of shatteringly crisp. Once it's completely cool, transfer it to an airtight container.

Why is my peanut brittle not fluffy? ›

It is important to coat cookie sheets with butter and put in the freezer to get them really cold before you need to pour the brittle. After you pour the candy you should put the pans in the fridge or outside if it is cold, so the brittle will set up quickly and stay fluffy.

What makes brittle hard? ›

What Makes it Brittle? The sugar will be cooked to 300ºF (149ºC)—hard crack stage; which when set up would be hard like a lollipop. But peanut brittle is delicate and you can easily bite into it—how? The secret is in the baking soda.

Can you use parchment paper when making peanut brittle? ›

You will want the cookie sheet to be non-stick. Use parchment paper, a silicone baking sheet or a greased cookie sheet. Spread the peanut brittle as thin as you can. Immediately add your sea salt.

Why did my peanut brittle crystallize? ›

When candy cools slowly on a stone slab, more crystals have a chance to form. With a higher number of micro-crystals, the sugar has more sites on which to crystallize, and so crystallization ultimately happens faster.

What's the difference between toffee and brittle? ›

Brittles are typically composed mostly of sugar, while toffees contain a fair amount of butter and in some cases milk. This makes toffees fuller and richer in taste, while brittles are more purely sweet and sugary. Brittles are also much thinner than most toffees.

Is peanut brittle bad for your teeth? ›

After it's made, peanut brittle turns into a hard, sticky candy that can do some serious damage to teeth. If you do eat peanut brittle this holiday season, make sure to thoroughly rinse your mouth with cool water afterwards to remove as much food debris as possible.

Can I freeze homemade peanut brittle? ›

Do not refrigerate as the moisture from the fridge will cause the brittle to soften. Store for 6-8 weeks. To Freeze: Peanut brittle can be frozen and stored up to 3 months. Allow the brittle to cool completely and store it in a freezer safe, airtight container.

How to keep peanut brittle from sticking together? ›

This peanut brittle recipe will keep for up to 2 months if stored in an airtight container in a cool, dry place. I recommend placing pieces of wax paper or parchment paper between the candy pieces to keep them from sticking together.

Is there a way to fix chewy peanut brittle? ›

So, I Googled Salvaging Undercooked Peanut Brittle and followed Tiffany's helpful instructions to throw the pieces back in the pan, turn the heat up and stir, stir, and stir to a raging boil and wait to pour it in the pan until it reaches 300 degrees.

Why does microwave make food chewy? ›

When one of those sugar molecules reaches 212 degrees Fahrenheit, it melts, which softens it. This is why bread can actually feel soft and fluffy when it first comes out of the microwave. But then when it cools, that molecule recrystallizes and hardens, causing the bread to become chewy and hard.

Why did my toffee turn out chewy? ›

Low and slow. Simmering the syrup for English toffee to the requisite 300°F temperature can (and should) be a slow process — up to 20 minutes or so. Don't hurry this gradual transformation; syrup that doesn't reach 300°F, or close to it, will make candy with timid flavor and chewy (not crunchy) texture.

How do you salvage soft peanut brittle? ›

I started on medium heat, but turned it down to a bit below medium. KEEP STIRRING. While it's still semi solid you MUST keep stirring or it WILL burn. I thought it was never going to turn into a liquid, but of course it did.
